A number of new food hygiene regulations apply in the UK. The new legislation requires all food businesses to operate a food safety management system based on the HACCP (Hazard Analysis and Critical Control Point). Food business operators are required to put in place procedures which manage food safety within their establishment. They must write these procedures down, update them as needed and keep records that can be checked. This helps food businesses to: Obey the law; reduce the risk of food poisoning; Protect business reputation
